Pecan Pie Oatmeal Breakfast Treat

Ingredients

  • 1/2 cup oats
  • 1 tsp chia seeds
  • 1 medjool date
  • Pinch of cinnamon
  • Pinch of salt
  • 1 tbsp chopped pecans
  • 1 tsp blackstrap molasses
  • 1 tsp maple syrup (optional)
  • 1 cup unsweetened soy milk

Preparation

  1. Combine all ingredients in a saucepan and bring to a low simmer.

  2. Stir to combine and continue stirring as oats cook and thicken, about 5 minutes.

  3. Adjust flavors as desired, feel free to add a little more sweetener if desired.

  4. Top with extra pecans, banana, and nibs for a nice chocolate note.
