Healthy Vegan Anzac Day Cookies

Ingredients

  • 3/4 c FODMAP-friendly nut meal (I use tiger nut flour - check out the blog for the low down on tiger nuts!) ✏️ 1/2 c gluten-free rolled oats ✏️ 1/4 c shredded coconut
  • ✏️ 25g extra virgin coconut oil ✏️ 1 tbsp coconut flour
  • ✏️ 40 ml rice malt syrup
  • ✏️ 1/2 tsp vanilla extract
  • ✏️ 1/4 tsp bi-carb soda
  • ✏️ Pinch salt

Preparation

  1. Preheat oven 160C

  2. Mix together the dry ingredients

  3. In a small saucepan melt the coconut oil (if solid), add syrup & vanilla

  4. Stir well

  5. Take off the heat & add bi-carb

  6. Add mixture to dry ingredients

  7. Roll into balls & flatten them down

  8. Bake for 15-20 min

  9. Note: these sweeties will harden as they cool

  10. For a crunchier version flatten them down well
