Healthy Vegan Anzac Day Cookies
Ingredients
- 3/4 c FODMAP-friendly nut meal (I use tiger nut flour - check out the blog for the low down on tiger nuts!) ✏️ 1/2 c gluten-free rolled oats ✏️ 1/4 c shredded coconut
- ✏️ 25g extra virgin coconut oil ✏️ 1 tbsp coconut flour
- ✏️ 40 ml rice malt syrup
- ✏️ 1/2 tsp vanilla extract
- ✏️ 1/4 tsp bi-carb soda
- ✏️ Pinch salt
Preparation
Preheat oven 160C
Mix together the dry ingredients
In a small saucepan melt the coconut oil (if solid), add syrup & vanilla
Stir well
Take off the heat & add bi-carb
Add mixture to dry ingredients
Roll into balls & flatten them down
Bake for 15-20 min
Note: these sweeties will harden as they cool
For a crunchier version flatten them down well
