High Protein Mcgriddle Breakfast Sandwich
Ingredients
- 1 cup protein pancake mix (or regular works too!)
- Water (as per package instructions)
- 2 eggs
- 2 heaping tablespoons of cottage cheese
- 2 slices cheddar cheese
- 2 breakfast chicken sausage patties
- Maple syrup for serving
Preparation
Whisk together pancake mix with water
Grab two ramekins and grease them well
Crack eggs into each one and add 1 tbsp cottage cheese, salt and pepper
Whisk well
Microwave for 45 seconds, stir and another 30 seconds
Grease a large skillet or griddle
Cook pancakes and sausage
Assemble sandwiches with pancake, sausage patty, cheese and egg, close with another pancake
Serve with maple syrup!
Notes
This recipe comes together quickly using store-bought pancake mix and frozen sausage patties
Using chicken breakfast sausage provides cleaner ingredients and more protein
Adding cottage cheese to the eggs makes them fluffy and delicious
