Homemade Maple Granola with Oats and Seeds
Ingredients
- 100g coconut oil
- 150ml maple syrup
- 1 orange, zest and a squeeze of juice
- 4 tsp ground cinnamon
- 400g jumbo oats
- 75g sunflower seeds
- 50g pumpkin seeds
- 50g flakes almonds
- 50g coconut chips
- 100g sultanas/raisins
Preparation
Pre-heat the oven to 160C/fan 140C.
Heat the coconut oil and maple syrup over a low heat until melted. Remove the pan from heat and add the orange zest and juice, and cinnamon.
Mix rest of ingredients (apart from the coconut chips and raisins) together in a big mixing bowl and pour over the melted coconut oil and maple syrup.
Spread the mixture evenly on a lined baking tray and bake, stirring every 5 minutes until golden brown (this should take about 45 minutes). Add the coconut chips for the last 10 mins.
Remove the tray from oven and leave to cool.
When the granola reaches room temperature, mix in the raisins.
