Matcha Latte Zucchini Oats

Ingredients

  • 1 C oat milk
  • 1 C water
  • 1 TBSP vanilla
  • 1 TBSP swerve (or sweetener of choice)
  • 1-2 tsp matcha (per your preference)
  • 1/8 tsp salt
  • 1 C shredded zucchini
  • 3/4 C GF rolled oats
  • 2 TBSP hemp seed

Preparation

  1. Bring oat milk, water, vanilla, sweetener, matcha, and salt to a boil.

  2. Add in zucchini, oats, and hemp seeds. Cook uncovered for 5-10 minutes until desired oat texture is reached. Taste and adjust sweetness to your liking.

  3. Remove from heat and let stand for a minute or two to thicken.

  4. Serve hot or cold, topped with banana, extra oat milk, shredded coconut, goji berries, and golden berries.

Tips

  1. These oats can be made ahead of time for easy healthy breakfasts all week long.
