Fresh and Fruity Zucchini Oat Bowl
Ingredients
- 1/2 C GF rolled oats
- 1 C water or plant milk
- 1 tsp vanilla extract
- 1/8 tsp salt
- 1 C shredded zucchini (optional)
- 1/2 papaya, cubed
- 1/2 C blueberries
- 1/2 C raspberries
- 1 TBSP pumpkin seeds
- 1 TBSP flax seeds
Preparation
Bring oats, water or milk, vanilla and salt to a boil. Reduce heat and simmer for 5 minutes or until desired texture is reached.
Stir in zucchini and simmer for another 1-2 minutes.
Pour into bowls and top with fresh fruit and seeds.
Tips
Shredded zucchini is optional but recommended as it adds creaminess and nutrients without altering the taste.
