Fresh and Fruity Zucchini Oat Bowl

Ingredients

  • 1/2 C GF rolled oats
  • 1 C water or plant milk
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 1 C shredded zucchini (optional)
  • 1/2 papaya, cubed
  • 1/2 C blueberries
  • 1/2 C raspberries
  • 1 TBSP pumpkin seeds
  • 1 TBSP flax seeds

Preparation

  1. Bring oats, water or milk, vanilla and salt to a boil. Reduce heat and simmer for 5 minutes or until desired texture is reached.

  2. Stir in zucchini and simmer for another 1-2 minutes.

  3. Pour into bowls and top with fresh fruit and seeds.

Tips

  1. Shredded zucchini is optional but recommended as it adds creaminess and nutrients without altering the taste.

  2. Oatmeal is a simple, filling plant-based breakfast that becomes nutrient-rich when paired with fresh fruits and seeds.
