Blueberry Cardamom Zucchini Oats

Ingredients

  • 1 C plant based milk
  • 1/2 cup water
  • 1/2 scoop plant based vanilla protein powder
  • optional: 2 TBSP sweetener of choice
  • 1/4 tsp salt
  • 1/2 tsp cardamom
  • 1/4 C hempseed
  • 1 TBSP chia seed
  • 1 C shredded zucchini
  • 1 tsp vanilla
  • 1/2 C GF rolled oats
  • 1 C blueberries

Preparation

  1. Add all ingredients to a medium saucepan and bring to a boil. Reduce to a simmer and cook for 5-10 minutes, stirring occasionally until desired thickness is reached.

  2. Transfer to bowls and serve topped with fresh blueberries, granola, and toasted coconut.

Tips

  1. These oats can be enjoyed hot or cold, making them ideal for meal prep and grab-and-go meals.

  2. The zucchini is not noticeable in taste and provides an extra serving of vegetables.
