Overnight Oats

Ingredients

  • 1 cup rolled oats
  • 1 cup plant-based milk
  • 1 scoop @youtheory spore probiotic powder
  • 2 tbsp maple syrup
  • 2 tbsp chia seeds (optional)
  • for topping: peach compote, almond butter, nuts, blueberries
  • 2 ripe peaches, diced
  • 2 tbsp coconut sugar
  • 2 tbsp water

Preparation

  1. Add all ingredients to a small saucepan and heat over medium-low

  2. As the peaches start to soften, mash them gently with a wooden spoon

  3. Simmer for about 10 minutes, until the mixture is thickened and the peaches are completely soft
