Pumpkin Pancakes with Yogurt Topping

Ingredients

  • 1/2 cup Kodiak Cakes pumpkin flax mix
  • 1/2 cup unsweetened almond milk
  • cinnamon
  • 1 egg white

Toppings

  • almond butter
  • granola
  • blackberries
  • bananas
  • plain yogurt
  • pumpkin purée
  • cinnamon

Preparation

  1. Mix the Kodiak Cakes pumpkin flax mix with unsweetened almond milk, cinnamon, and egg white to form batter

  2. Cook the batter on a hot griddle or pan until golden brown on both sides

  3. Caramelize sliced bananas in a pan with a little sugar or butter until golden

  4. Mix plain yogurt with pumpkin purée and cinnamon.

  5. Top the cooked pancakes with almond butter, granola, blackberries, caramelized bananas, and the yogurt mixture.
