Purple Plants & Peanut Butter
Ingredients
- 2 tbs of liquid aminos
- 1 tbs of rice vinegar
- 2 tsp of hoisin sauce
- 2 tsp sesame oil
- 1/2 tsp of ground ginger
- 12 oz of diced tofu
- butter lettuce
- purple cabbage
- alfalfa sprouts
- zoodles
- purple rice noodles
- cucumber
- avocado
- red onion
Preparation
Combine first 5 ingredients into a bowl and stir well
Add tofu and allow to marinate
Preheat oven to 400° f
Bake tofu in oven for 20 minutes
Remove and roll back in leftover marinade and place back in oven for another 20 minutes
Place remaining ingredients onto plates of choice
Remove tofu from oven and place back in marinade and then onto dishes
For the dressing: 1/4 cup of peanut butter2 tbs of liquid aminos2 tbs of rice vinegar2 tbs of water1 tbs of agave1 tsp of sesame oil1/2 tsp of ground ginger
Whisk well all ingredients for dressing in a large ramekin
Garnish dishes with lime and sesame seeds
Serve and enjoy
