Scrambledtofu

Ingredients

  • 2 slices of crusty bread ⠀
  • 1 tsp olive oil⠀
  • 1 tsp garlic puree/ 1 fresh clove crushed⠀
  • 1/4 tsp turmeric (for yellow colour)⠀
  • 1/4 tsp dijon mustard (for a little warmth)⠀
  • 1/2 tsp marjoram (or mixed herbs)⠀
  • 1 generous tbsp nutritional yeast⠀
  • 50ml oat milk (creaminess) ⠀
  • pinch of sea salt (i use @maldonsalt)⠀
  • generous grinding of black pepper⠀
  • fresh coriander/parsley/chives finely chopped and chilli flakes (optional)

Preparation

  1. Use a bread knife to slice your bread.⠀

  2. Put the olive oil and garlic puree in a pan on medium heat. Then add the tofu and use a fork to mash it up in the pan. ⠀

  3. Take it off the heat and add the remaining ingredients (except the toppings).⠀

  4. Place back over the heat and use a wooden spoon to combine all the ingredients together well. Leave to simmer on a low heat for 6-8mins. ⠀

  5. Whack your toast on and prepare your toppings⠀

  6. Serve up and voila! ⠀
