Soba Noodles with Cilantro & Lime Hummus

Ingredients

  • 2 servings of soba noodles
  • 3 tbsp of maza hoemoes koriander limoen
  • 60 ml vegetable stock
  • 2 tbsp rice wine vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • green onion
  • roasted sesame seeds
  • fresh cilantro

Preparation

  1. Prepare the soba noodles according to the package

  2. Mix together the hummus, vegetable stock, rice wine vinegar, soy sauce and sesame oil

  3. Gently fold in the soba noodles when ready

  4. Transfer the noodles onto two plates and serve with the green onion, roasted sesame seeds and some fresh cilantro
