Spotted Dick Baked Oats in a Cup

Ingredients

  • 5 tbsp (40-50g) porridge oats, blended if possible
  • 2-3 tbsp any plain or vanilla yoghurt or milk
  • 1 handful sultanas
  • 1/3 tsp baking powder
  • Big squeeze of lemon juice
  • Custard or more vanilla yoghurt for serving

Preparation

  1. Put all the ingredients into a cup and mix until foamy, ensuring that all the oats are combined from the bottom of the mug. If you have a blender, you can blitz the oats to a powder for a few seconds to achieve a more cake-like texture. Clean the rim of the cup with your finger.

  2. Microwave the cup on high for 90 seconds, or transfer the mixture into a lined oven-proof dish and bake in the oven for 15 minutes at 180C/350F/gas mark 4.

  3. Carefully tip the baked oats out onto a plate, top with hot custard, and enjoy immediately.
