Sweet Potato Waffle with Sautéed Apples
Ingredients
- 1/3 cup mashed sweet potato
- 2 eggs
- 1/4 cup homemade cashew milk
- 3 tbsp coconut oil
- 1/2 cup almond flour
- 1/4 cup tapioca flour (optional)
- 1 tsp baking soda
Toppings
- Apples
- Pecans
- Coconut oil
- Apple pie spice
- Vanilla yogurt
- Almond butter
- Granola
Preparation
Prepare the sweet potato by steaming or baking until soft, peeling, and mashing to measure 1/3 cup.
In a bowl, mix together the mashed sweet potato, eggs, cashew milk, coconut oil, almond flour, tapioca flour, and baking soda. Add more cashew milk if the batter is too thick.
Preheat a waffle ironand cook the batter to make waffles.
Sauté apples and pecans in coconut oil with apple pie spice until softened.
Serve the waffles topped with the sautéed apples and pecans, vanilla yogurt, almond butter, and granola.
