The Enchanted Broccoli Forest

Ingredients

  • For the ~SAUCE~ you'll need • 1/2 cup unprocessed peanut butter • 1/2 cup hot water • 1/4 cup apple cider vinegar • 2 tbsp tamari (or sub soy sauce) • 2 tablespoons blackstrap molasses (or sub maple syrup) • 1/2 tsp cayenne pepper. ✨ For the ~SAUTÉ~ you'll need • 1 bunch broccoli
  • chopped • 1 block extra firm tofu
  • chopped into cubes • 2 cups onion
  • chopped • 4 cloves of garlic
  • minced • 2 tbsp ginger
  • minced • 2 tbsp tamari (or sub soy sauce) • oil for sautéing • chopped green onion and peanuts to top • salt to taste

Preparation

  1. Mix the sauce ingredients together in a small bowl and set aside

  2. Heat a large pan or wok over medium-high heat and drizzle generously with oil (tofu has a tendency to stick)

  3. Sauté onions until translucent then add the tofu to to brown

  4. Once the tofu starts to get crispy, add the broccoli and tamari, continuing to sauté until the broccoli become bright green

  5. Add sauce and mix well

  6. Serve with rice, garnished with green onion and peanuts
