Tropical Overnight Oats with Passionfruit and Mango

Ingredients

  • 55g (about 1/2 cup) rolled oats
  • 10g (1 tbsp) chia seeds
  • Juice and seeds of 1 passion fruit
  • 2 tsp of your favourite natural sweetener (e.g., maple syrup, coconut nectar)
  • 180ml (3/4 cup) plant-based milk

Preparation

  1. Add all ingredients to a jar or a bowl and mix well to combine. Let sit in the fridge overnight.

  2. In the morning, give it a quick stir, top with coconut cream or yogurt, chopped mango, passion fruit, coconut chips, and optional puffed quinoa. If desired, add an extra drizzle of sweetener and enjoy.
