Turmeric Scrambled Eggs

Ingredients

  • 1/2 red onion
  • 1 tsp olive oil
  • 250gms cherry tomatoes
  • 1-2 teaspoons turmeric
  • 1/2 red onion

  • 8 eggs
  • Coriander - chopped & red chilli (adults) to serve

Preparation

  1. Finely slice the onion and fry in the oil for a few minutes until starting to just caramelise

  2. Whisk up the eggs, add the turmeric and pour into the frying pan

  3. The tomatoes and add them to the eggs

  4. Scramble the eggs, add salt and pepper to taste (avoid added salt for under 1’s)

  5. Add chopped coriander

  6. Serve right away on a slice of toasted buttered sourdough
