Vegan Brownies

Ingredients

  • 350g cooked sweet potato
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar
  • 1/3 cup cocoa powder
  • 1/4 cup coconut oil, melted
  • 1 cup all purpose flour or half oat flour and half all purpose flour
  • 1/3 cup vegan chocolate chips

Preparation

  1. Preheat oven to 180°C and prepare a baking tray

  2. Peel and dice the sweet potato into small cubes

  3. Steam or cook for 15 to 20 minutes until soft and let it cool before mashing them up

  4. In a food processor or blender mix the mashed up sweet potatoes, maple syrup, coconut sugar, melted coconut oil, flour and the cacao powder

  5. Blend everything until you have a sticky brownie batter

  6. Add in some dark chocolate chips into the dough and on top of it later on before going into the oven

  7. Now just put the dough onto the baking sheet and let it bake for around 35 to 40 minutes
