Paprika Chicken & Vegetable Rice Bake

Ingredients

  • 750g chicken pieces
  • 350g basmati or long grain rice
  • 500ml chicken stock
  • 3 cloves garlic, chopped
  • 2 tbsp olive oil
  • 2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1 finely chopped onion
  • 1 red bell pepper, diced
  • 1 medium carrot diced
  • 2 medium sized ripe tomatoes, rough chopped
  • 2 cups frozen peas
  • handful chopped fresh parsley
  • salt & black pepper •

Preparation

  1. Preheat oven to 200 degrees

  2. Place the chicken pieces in a mixing bowl, add a drizzle of olive oil, a teaspoon of the smoked paprika, a pinch of salt and pepper and rub everything over the chicken pieces

  3. Set aside

  4. Add the remaining oil, and the chopped onion and carrot into a large oven proof dish and soften in the oven for 10 mins

  5. Add the red pepper, garlic and chopped tomato, paprika and cayenne pepper and cook off in the oven for another 5 mins

  6. Add the rice and stock and season with salt and pepper, mix well

  7. Place the chicken pieces and on top and bake for 30 mins, check 20 mins and add a little water if necessary, put back in the oven for another 10 mins

  8. Season and add the chopped parsley
