Sweet Potato Zoodles Lunch with Chicken and Veggies
Ingredients
- 1 piece of chicken
- 1/2 avocado
- sweet potato
- Brussels sprouts
- spinach
- ghee
- feta cheese
- Trader Joe's every day seasoning
- primal palate BBQ rub
- red pepper flakes
Preparation
Bake chicken at 400°F for 35 minutes with primal palate BBQ rub.
Spiralize sweet potato using KitchenAid attachment.
Coat a pan with ghee and toss in sweet potato noodles, cook for 15 minutes until soft, then top with feta and Trader Joe's every day seasoning.
Roast Brussels sprouts at 400°F for 40 minutes.
Sauté spinach with red pepper flakes.
Assemble the meal with 1/2 avocado.
