Tuna Pasta with Tomatoes, Olives and Capers

Ingredients

  • 250g mafalda corta pasta (i used garofalo)
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • 3 tbsp capers
  • 4 large tomatoes, chopped
  • 150g mixed olives, pitted
  • 2 tins tuna (145g each)
  • juice of 1 lemon

Preparation

  1. Cook pasta as per packet instructions minus 1 min

  2. Drizzle the olive oil in a large frying pan on a medium heat

  3. Add the oregano followed by the capers, tomatoes and olives

  4. Cook for 2 mins then add the tuna and lemon juice

  5. Reduce heat and simmer until the pasta is ready

  6. Drain the pasta and add to the tuna pan

  7. Combine everything together and serve!
