1-Pot Vegan Meatball & Tomato Pasta

Ingredients

  • 3.5 oz dry pasta of choice, no need to pre-cook (i used rigatoni)
  • 1/2 red onion, chopped
  • 1 garlic clove, minced
  • 1 tsp olive oil
  • 1 cup tomato sauce (i used roasted garlic pasta sauce)
  • 1 1/2 cups water
  • 2 tomatoes, chopped (i also added some extra grape tomatoes)
  • 1 tsp coconut sugar (optional)
  • 1 tsp italian seasoning (only if your sauce isn’t seasoned enough)
  • to garnish: basil & freshly ground pepper

Preparation

  1. Add all ingredients to a pan or pot (except the garnishes)

  2. Cook over medium to high heat for 15 minutes (start with high to bring to a boil and reduce later if need be, but the heat should stay relatively high to ensure the pasta cooks all the way through)

  3. Taste test the pasta

  4. If it’s not fully cooked yet, add 3-5 more minutes

  5. Enjoy with the garnishes!
