An Awidhi Rice Dish

Ingredients

  • Take one cup of rice and soak it for 30 min. Wash 1 cup each of peeled green peas and diced carrots. You can add potatoes and cauliflower too. But we love it with peas and carrots only. In a wok
  • take 4 teaspoon of ghee
  • once it is hot
  • keep the flame low and add cumin seeds
  • 1/2 tsp of hing
  • 1 tsp of turmeric powder
  • chilli powder ( as per taste) 2 Bay leaves
  • 1 cinnamon stick
  • 2 crushed black cardamoms
  • 2-3 cloves. Mix Everything together and now add 1 teaspoon of garam masala. Add very little water and let it heat for 2 min. Once you get the aroma of all spices . Add peas and carrots. Saute it for 5 min. Now add rice and water in 1:2 ratio. Add salt as per taste and mix everything. Cover the wok and let it cook. Serve it with green chutney
  • pickle
  • papad and raita. Add 2-3 teaspoon of hot ghee over tahiri before serving. Enjoy
