Beef Taco Bowls with Enchilada Sauce

Ingredients

  • ground beef
  • 1/2 onion
  • 1 zucchini
  • 2 small peppers
  • two garlic cloves
  • mixed greens
  • avocado
  • sweet potatoes
  • feta

Sauce

  • 1 cup tomato sauce
  • 3/4 cup stock
  • 1/2 tsp garlic and onion powder
  • 1 tbsp chili powder
  • hot sauce

Preparation

  1. Cook ground beef.

  2. Sauté 1/2 onion, 1 zucchini, 2 small peppers, and two garlic cloves.

  3. Mix the cooked ground beef with the sautéed vegetables.

  4. Combine 1 cup tomato sauce, 3/4 cup stock, 1/2 tsp garlic and onion powder, 1 tbsp chili powder, and hot sauce for the sauce.

  5. Cook the sauce mixture for 10 minutes.

  6. Serve the beef mixture over a bed of mixed greens, add avocado and sweet potatoes, and sprinkle with feta.
