Beef Taco Bowls with Enchilada Sauce
Ingredients
- ground beef
- 1/2 onion
- 1 zucchini
- 2 small peppers
- two garlic cloves
- mixed greens
- avocado
- sweet potatoes
- feta
Sauce
- 1 cup tomato sauce
- 3/4 cup stock
- 1/2 tsp garlic and onion powder
- 1 tbsp chili powder
- hot sauce
Preparation
Cook ground beef.
Sauté 1/2 onion, 1 zucchini, 2 small peppers, and two garlic cloves.
Mix the cooked ground beef with the sautéed vegetables.
Combine 1 cup tomato sauce, 3/4 cup stock, 1/2 tsp garlic and onion powder, 1 tbsp chili powder, and hot sauce for the sauce.
Cook the sauce mixture for 10 minutes.
Serve the beef mixture over a bed of mixed greens, add avocado and sweet potatoes, and sprinkle with feta.
