Taco Stuffed Zucchini Boats

Ingredients

  • 3 zucchini
  • 1 lb ground beef
  • 1 onion
  • 3/4 cup salsa

Spices

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp chili powder

Preparation

  1. Heat a skillet over medium heat.

  2. Cut the zucchini in half and scoop out the middle with a spoon, then put it in a bowl for later use.

  3. Dice the onion and add it to the skillet with a little oil to prevent sticking.

  4. Preheat the oven to 400°F

  5. Sauté the onion for 3-4 minutes, then add the ground beef and sauté until brown.

  6. Add the spices, 3/4 cup salsa, and the chopped leftover zucchini, then sauté for another 2-3 minutes

  7. Transfer the beef mixture to the zucchini boats.

  8. Spray a pan or oil it, add the zucchini, and bake for 20 minutes.

  9. Enjoy.
