Taco Stuffed Zucchini Boats
Ingredients
- 3 zucchini
- 1 lb ground beef
- 1 onion
- 3/4 cup salsa
Spices
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp chili powder
Preparation
Heat a skillet over medium heat.
Cut the zucchini in half and scoop out the middle with a spoon, then put it in a bowl for later use.
Dice the onion and add it to the skillet with a little oil to prevent sticking.
Preheat the oven to 400°F
Sauté the onion for 3-4 minutes, then add the ground beef and sauté until brown.
Add the spices, 3/4 cup salsa, and the chopped leftover zucchini, then sauté for another 2-3 minutes
Transfer the beef mixture to the zucchini boats.
Spray a pan or oil it, add the zucchini, and bake for 20 minutes.
