Bolognese

Ingredients

  • 1 cup of passata
  • 1 cup of veggie stock
  • 50 grams of sunflower seeds
  • 1 bay leaf
  • 1 tsp of smoked paprika
  • 1 tsp of dried thyme
  • 1 tsp of dried basil
  • 2 tbsp of nutritional yeast(optional)

Preparation

  1. In the olive oil saute chopped onion and garlic till they started to soften

  2. Meanwhile, grate the carrot and crunch sunflower seeds

  3. And add it to the pan, sprinkle with all the spices and cook till fragrant

  4. Add pulled oats to the pan and follow with passata, bay leaf and veggie stock and sunflower seeds

  5. Cover and allow to cook for 10 minutes or till sauce has reduced till your preferred consistency

  6. Taste the sauce and adjust seasonings if needed, remove the bay leaf

  7. And serve with your pasta of choice and a sprinkle of nutritional yeast
