Easy Peasy Toad in the Hole
Ingredients
- 1 cup of plain flour
- 1 cup of milk
- 1 cup of eggs
- good pinch of salt and pepper
- 8 big fat butcher’s sausages (10-12 standard sausages)
- 2 tbsp beef dripping/veg oil
Preparation
To make the batter - put the flour, eggs, milk and a good pinch of salt in a mixing bowl and give it a good whisk until they’re no lumps
Leave the batter to rest for 30 mins
Preheat oven to 210 degrees celsius
Put the oil in your baking tin and give it a quick rub around the side and edges to avoid sticking
Pop the tin in the oven to heat up for 5 mins
While that’s heating giving the sausages a quick brown off for a few mins in a frying pan or under the grill
Carefully pour the batter into the baking tray and place the sausages in the batter
Put straight back in the hot oven for 40 mins or until risen and crispy golden brown
Don’t open the door for at least the first 30 mins while the batter is rising
