Falafel

Ingredients

  • For the sauce we used - 1 large chilli with seeds ? 4 cloves of garlic ? 1 red onion ? half pack of chestnut mushrooms ? 1 red & 1 yellow pepper ? 1 tin chopped tomatoes ? 1 tin kidney beans ?500ml stock ? 250g sweetcorn ? 1/2 tsp rosemary
  • heaped tsp tomato purée
  • 1 tsp basil
  • season to taste
  • falafel
  • rice

Preparation

  1. Baked the falafels in the oven in 15 minutes & mixed everything together, served up with some rice

  2. Often things don’t go to plan in our kitchen ? I feel like with #vegancooking it’s much easier if you can be a bit flexible and improvise when you need to
