Five Minute Grain-Free, Dairy-Free

Ingredients

  • 1 large courgette
  • 1 tbsp of EVOO
  • 1/2 lemon juice
  • a small fistful of fresh flat leaf parsley
  • 1 tbsp of capers
  • sea salt
  • lots of black pepper and a 1/2 cup of brown and white crab meat (or as much as you can afford - it’s pricey stuff)

Preparation

  1. Simply throw everything into a large pan and cook for a matter of minutes, giving everything a good mix

  2. You want to ensure the courgette has wilted SLIGHTLY but is not soggy
