Spicy Beef Madras
Ingredients
- 2 tbsp coconut oil
- 500g diced casserole steak
- 2 medium onions finely chopped
- 2 green chillies deseeded & chopped
- 1 heaped tbsp chopped garlic
- 1 heaped tbsp chopped ginger
- 1 tbsp lemon juice
- 1 whole star anise
- 2 bay leaves
- 2 tsp cumin
- 2 tsp ground coriander
- 1 tsp turmeric
- 1.5 tsp cayenne pepper
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/2 tsp ground black pepper
- 1 tsp salt
- 400g chopped tomatoes
- 400ml beef stock
- 125ml greek yogurt
Preparation
Put the garlic, green chilli, ginger and lemon juice in a blender and make a smooth paste, add 1 tbsp water if necessary, you can cook it off later
Set aside
Melt the coconut oil on a medium high heat, then stir in the chopped onions, star anise and bay leaves and sauté until the onions turn golden brown
Turn the heat up high and say it in the beef to brown, stir every few mins for 7 or 8 mins
Add the paste and sauté for a few mins, then stir in the salt and dry spices
Stir continuously for 2 mins, then stir in the chopped tomatoes and then the stock
Cover and leave on a medium simmer for 90 mins, stirring well every 30 mins
Stir in the yoghurt, turn the heat up one notch and simmer for another 20mins uncovered to reduce
Check for seasoning and leave to rest for 5 mins before serving
