Ingredients

  • In a bowl, mix 1.5 cups cooked quinoa, 1 can black beans, 1 cup corn, 2/3 cups salsa, 2 green onions (chopped) & 1 tsp of chili powder, cumin and paprika. Place pepper halves in a lightly sprayed 9x13 pan and fillwith mixture. Cover with foil, and bake at 350 for 40 min
