Thai Green Curry

Ingredients

  • 1/2 tsp toasted coriander seeds⁣⁣
  • 1/4 tsp toasted cumin seeds⁣⁣
  • 1 tbs lime zest⁣⁣
  • pinch salt⁣⁣
  • 1 tbs galangal⁣⁣
  • 2 tbs lemongrass⁣⁣
  • 15 green birds eye chillis, chopped⁣⁣
  • 3 tbs chopped garlic⁣⁣
  • 3 tbs chopped red shallot⁣⁣
  • 1 tbs chopped coriander stem⁣⁣
  • 8 baby corn⁣⁣
  • handful of daikon strips⁣⁣
  • 1.5 tbs light soy sauce⁣⁣

Preparation

  1. Make a paste by pounding all curry paste ingredients in a mortar and pestle. ⁣

  2. In a hot wok or pot add coconut cream and heat on high for a couple minutes until the cream splits⁣⁣

  3. Fry 2 tbs of the paste in the cracked cream for a 1 minute then add tofu and stir for a further minute⁣⁣

  4. Add stock then simmer for 5 minutes⁣⁣

  5. Season with soy sauce then add baby corn and radish and simmer for a further 2 mins⁣⁣

  6. Garnish with shredded kaffir lime leaf, Thai basil, and a couple slices of red chilli. Serve with Jasmine rice
