Thai Green Curry
Ingredients
- 1/2 tsp toasted coriander seeds
- 1/4 tsp toasted cumin seeds
- 1 tbs lime zest
- pinch salt
- 1 tbs galangal
- 2 tbs lemongrass
- 15 green birds eye chillis, chopped
- 3 tbs chopped garlic
- 3 tbs chopped red shallot
- 1 tbs chopped coriander stem
- 8 baby corn
- handful of daikon strips
- 1.5 tbs light soy sauce
Preparation
Make a paste by pounding all curry paste ingredients in a mortar and pestle.
In a hot wok or pot add coconut cream and heat on high for a couple minutes until the cream splits
Fry 2 tbs of the paste in the cracked cream for a 1 minute then add tofu and stir for a further minute
Add stock then simmer for 5 minutes
Season with soy sauce then add baby corn and radish and simmer for a further 2 mins
Garnish with shredded kaffir lime leaf, Thai basil, and a couple slices of red chilli. Serve with Jasmine rice
