Vegan Burger Packed with a Smokey Green Spelt & Beetroot Patty, Wasabi Mayonnaise, Green Tomatoes, Radish, Sprouts and Lettuces
Ingredients
- Ingredients for the patties
- 1/2 c (90 g) shredded green spelt
- 1/3 c (32 g) rolled oats
- 2 tbsp sunflowerseeds (minced)
- 3/4 c (180 ml) water
- 2 small cooked beetroot (180 g)
- 1 garlic clove
- 1 onion
- 2 tsp avocado oil
- 1/2 c chickpea flour
- 1 tsp salt
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 1 pinch of nutmeg
- Ingredients for mayonnaise
- 1/2 c (120 ml) rape seed oil
- 1/4 c (60 ml) soymilk
- 1 tbsp lemon juice
- 1,5 tsp wasabi
- 1 tsp agave syrup
- 1/4-1/2 tsp salt
- Pepper
- Directions: Add oil, soy milk and lemon juice to a high container and blend with a hand-held-blender until you have a creamy texture. Mix in other ingredients
Preparation
Directions: Add green spelt, oats, sunflower seeds, salt and water to a small sauce pan
Bring to a boil, remove from heat and let soak for 10 minutes
Meanwhile peel and cube onion and garlic
Transfer garlic with beetroot chunks into a high container and blend until smooth
Add blended beetroot together with onions and herbs to the saucepan and mix well
Mix in chickpea flour until you have a sticky texture (add more chickpea flour if needed)
Shape 6 patties and bake for 30 minutes at 200 C (turn patties after 15 min)
