Spiced C H I C K P E a + Cauliflower Bowl

Ingredients

  • toss 2-3 cups chopped cauliflower
  • 2 cups chickpeas & 1/2 cup loosely diced red onion in olive oil
  • salt
  • pepper
  • cumin
  • garlic powder
  • paprika {1 tsp each} & a little cayenne {optional}; bake at 375 for 30 mins; serve with your choice of greens {I used arugula}
  • rice
  • feta & a simple olive oil/lemon dressing; add hot sauce for extra flavour or another dressing of your choice
