Spiced C H I C K P E a + Cauliflower Bowl
Ingredients
- toss 2-3 cups chopped cauliflower
- 2 cups chickpeas & 1/2 cup loosely diced red onion in olive oil
- salt
- pepper
- cumin
- garlic powder
- paprika {1 tsp each} & a little cayenne {optional}; bake at 375 for 30 mins; serve with your choice of greens {I used arugula}
- rice
- feta & a simple olive oil/lemon dressing; add hot sauce for extra flavour or another dressing of your choice
