Vietnamese Mint Coconut Fried Rice

Ingredients

  • 1 handful Vietnamese mint, chopped
  • 1/2 cups green beans, chopped
  • 1/2 cup carrot, diced
  • 4 clove garlics, minced
  • 1 onion,diced
  • 1 or 2 chillies pepper
  • 1 tsp ground ginger
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp sesame seed
  • 1/2 tsp dark soy sauce(optional)
  • Salt and pepper for seasoning
  • 2 tbsp coconut oil
  • 1 cup coconut rice

  • 1 cup basmati rice
  • 1 1/2 cups water
  • 1/2 cup coconut milk

Preparation

  1. Rinse and drain the rice

  2. Combine the rice, coconut milk and water in a medium saucepan, stir well

  3. Place over on a high heat and bring it to boil, once it’s boil reduce to low heat

  4. Continue to cook about 15 minutes, fluff with fork and let it cool completely before the next cooking

  5. You can cook it a day earlier too)

  6. Heat the coconut oil in a large wok or deep skillet over medium heat. Add the garlic and onion, sauté till fragrant

  7. Add the Chilli pepper, carrots and green beans, sauté till the veggies are soft

  8. Stir in the cooked fried rice, soy sauce, ground ginger, thick soy sauce, sesame oil, sesame seed, seasoning and Vietnamese mint

  9. Finally cook and toss for another 2 minutes. Remove from the heat and serve warm
