Blueberry Oat Cookies

Ingredients

  • 3/4 cup vegan butter/marg
  • 3/4 cup dark brown sugar
  • 1 tsp vanilla
  • 1 & 1/2 cups plain flour
  • 1 flax egg
  • 1 & 3/4 cups porridge oats
  • 1 tsp baking powder
  • 1 tbsp golden syrup
  • a good splash of plant milk
  • 150g blueberries -

Preparation

  1. Preheat the oven to 180 degrees

  2. Cream the butter and sugar together

  3. Add all the remaining ingredients (apart from the blueberries) to the bowl and stir until a dough is formed

  4. If your mixture is not coming together, add a touch more plant milk

  5. Add the blueberries to the bowl and mix in

  6. Roll the dough into balls and squash a little with the palm of you hand

  7. Pop these cookie balls onto a lined baking tray

  8. Cook for 10-13 minutes or until golden brown
