Blueberry Oat Cookies
Ingredients
- 3/4 cup vegan butter/marg
- 3/4 cup dark brown sugar
- 1 tsp vanilla
- 1 & 1/2 cups plain flour
- 1 flax egg
- 1 & 3/4 cups porridge oats
- 1 tsp baking powder
- 1 tbsp golden syrup
- a good splash of plant milk
- 150g blueberries -
Preparation
Preheat the oven to 180 degrees
Cream the butter and sugar together
Add all the remaining ingredients (apart from the blueberries) to the bowl and stir until a dough is formed
If your mixture is not coming together, add a touch more plant milk
Add the blueberries to the bowl and mix in
Roll the dough into balls and squash a little with the palm of you hand
Pop these cookie balls onto a lined baking tray
Cook for 10-13 minutes or until golden brown
