No-Fry Sweetcorn Appe with Spicy Coriander Chutney
Ingredients
- Kernels from 2 sweetcorn cobs
- 2 finely chopped garlic cloves
- 2-3 chopped green chillies
- 1 finely chopped onion
- Chopped coriander leaves
- 1/2 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1 teaspoon cumin seeds
- 2 tablespoons besan
- 2 tablespoons rice flour
- Salt
- Optional: 1-2 teaspoons water
Chutney
- 2-3 garlic cloves
- 3 green chillies
- 2 large tomatoes
- A large bunch of coriander leaves
- Optional: some mint leaves
- Salt
Preparation
Remove kernels from 2 sweetcorn cobs
Coarsely grind half of the kernels in a blender
Add the remaining whole kernels to the ground mixture
Add finely chopped garlic, chopped green chillies, finely chopped onion, and chopped coriander
Add turmeric powder, chili powder, cumin seeds, besan, rice flour, and salt
Mix everything well and add 1-2 teaspoons of water if needed to form a batter
Heat an appe pan over low to medium flame and add a little oil or butter
Spoon the batter into the appe pan and cook until golden and crispy
Chutney
In a mixer jar, add garlic, green chillies, tomatoes, coriander leaves, optional mint leaves, and salt
Grind everything into a smooth paste

Serve the sweetcorn appe with the spicy coriander chutney and a cup of tea for a perfect rainy day snack
