Orange Quinoa Energy Bites
Ingredients
- 1/2 cup roasted almonds
- 1/4 cup sulfur-free dried apricots
- 5 medjool dates, pitted
- 1 cup unsweetened coconut flakes, divided
- 1 cup cooked black quinoa
- 1/4 cup unsweetened cocoa powder
- 3 tablespoons almond butter
- 1 tablespoon ground flax
- 1 orange, zested and juiced
Preparation
Process or blend the almonds, apricots, dates and 1/2 cup of the coconut flakes in a food processor or high-speed blender until smooth
Add quinoa, cocoa powder, almond butter, ground flaxseed, and orange zest and juice and process or blend until smooth
Pour remaining 1/2 cup coconut flakes in a small bowl
Using your hands, roll 1 teaspoon of the mixture into a ball and roll it in the coconut flakes
Place on a large plate and repeat with remaining mixture
Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months
