Orange Quinoa Energy Bites

Ingredients

  • 1/2 cup roasted almonds
  • 1/4 cup sulfur-free dried apricots
  • 5 medjool dates, pitted
  • 1 cup unsweetened coconut flakes, divided
  • 1 cup cooked black quinoa
  • 1/4 cup unsweetened cocoa powder
  • 3 tablespoons almond butter
  • 1 tablespoon ground flax
  • 1 orange, zested and juiced

Preparation

  1. Process or blend the almonds, apricots, dates and 1/2 cup of the coconut flakes in a food processor or high-speed blender until smooth

  2. Add quinoa, cocoa powder, almond butter, ground flaxseed, and orange zest and juice and process or blend until smooth

  3. Pour remaining 1/2 cup coconut flakes in a small bowl

  4. Using your hands, roll 1 teaspoon of the mixture into a ball and roll it in the coconut flakes

  5. Place on a large plate and repeat with remaining mixture

  6. Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months
