Peanut Butter and Jelly Granola Cups

Ingredients

  • 1 cup oats
  • 4 medjool dates
  • 1/4 cup peanut butter (or any nut/seed butter)
  • 1/3 cup peanuts
  • 1/4 cup macadamia nuts (or any other nut/more peanuts)
  • 2 tablespoons cacao nibs
  • 1/2 tablespoon cinnamon
  • 2 tablespoons plant milk (more or less if needed)
  • 1/4 cup jam or jelly
  • 1 cup blueberries
  • 2-3 tablespoons chia seeds
  • chocolate
  • chocolate oat milk

Preparation

  1. Blend the base ingredients together to form the granola cups.

  2. Make the jam by cooking down 1 cup blueberries on the stove, stirring in 2-3 tablespoons chia seeds, and letting it sit for 10 minutes to thicken.

  3. Melt chocolate on the stove with a splash of chocolate oat milk to create the chocolate layer.

  4. Assemble the cups by adding the jam and topping with the chocolate layer and a sprinkle of peanuts.

  5. For a healthier jam option, mash fresh fruit with dates or stevia in a food processor and dry in a very low oven or dehydrator.
