Maple Peach Porridge with Blueberries and Peanut Butter

Ingredients

  • barley flakes
  • chia seeds
  • soy milk
  • 1-2 fresh peaches
  • 1 tablespoon maple syrup
  • pinch of cinnamon
  • coconut milk
  • handful of blueberries
  • peanut butter

Optional toppings

  • cacao nibs
  • quinoa puffs
  • amaranth puffs

Preparation

  1. Cook the porridge using barley flakes, chia seeds, and soy milk until it is simmering.

  2. Sauté 1-2 sliced fresh peaches in 1 tablespoon of maple syrup and a pinch of cinnamon on medium heat for 3-4 minutes.

  3. Serve the porridge with a splash of coconut milk, the sautéed peaches, a handful of blueberries, and a generous drizzle of peanut butter.

  4. Add optional toppings such as cacao nibs, quinoa puffs, and amaranth puffs if desired.
