Pumpkin & Tofu Croquette

Ingredients

  • 500g steamed pumpkin / 60g finely sliced onion / 70g tofu / 2 tbsp chickpea flour / 1 tsp soy sauce / 1/2 tsp sugar / 1/4tsp garlic powder / a few drops of liquid smoke / aquafaba / breadcrumbs⁣

Preparation

  1. In a pan, on medium heat, add a tbsp of oil and the onion

  2. Cook them until they are translucent

  3. Then, add the crumbled tofu, soy sauce, sugar, liquid smoke, garlic powder

  4. Meanwhile, in a large bowl, mash the pumpkin with a fork

  5. Add the cooked onions&tofu

  6. And the gram flour, season with salt&pepper

  7. Scoop balls, place them onto a plate and put in the fridge for 30mn-1h

  8. Prepare 2 bowls : 1 with the breadcrumbs and one with aquafaba or chickpea flour slurry (1 tbsp with 60mL water)

  9. Then roll the balls into the slurry and then to the breadcrumbs

  10. They are ready to be fried!⁣
