Spanakopita Triangles for a Bomb Dinner

Ingredients

  • 1/2 package thawed fillo dough
  • 2 10 oz packs of chopped frozen spinach
  • 2 medium yellow onion chopped
  • 4 cloves garlic minced
  • 1 tsp olive oil
  • 2 Tbl corn starch
  • 2 12 oz packs firm @morinutofu
  • 1/2 cup chopped kalamata olives
  • 1 tsp dried dill
  • Pinch ground nutmeg
  • 1/2 cup olive oil

Preparation

  1. Preheat oven to 350 F. Line 2 baking sheets with parchment. Saute onions and garlic in 1 tsp olive oil. Add Tofu and crumble in the pan with a spatula. Cook until tofu starts to brown and much of the water is out. About 10 minutes. Let cool. In separate bowl add thawed and drained spinach. Mix together all ingredients. ?

  2. Brush one sheet of dough with oil. Add another sheet and brush. Cut into 3 long strips. Place 2-3 Tbl filling on one end and fold into triangle like a middle school love note. Place on baking sheet as brush the top with oil. Bake for 45-50 minutes until browned
