Tasty Vegan Pizza Muffins for Snacks

Ingredients

  • 1 cup Chickpea Flour
  • 1 cup All Purpose Flour
  • 1 cup Almond Milk
  • 1/4 cup Grated Vegan Mozzarella (@sheese_australia)
  • 1 punnet Cherry Tomatoes
  • 1 tsp Dried Basil
  • 1 tsp Dried Chives
  • 1 tsp Baking Powder

Preparation

  1. Preheat oven to 180°C

  2. Add all ingredients to a bowl and mix until combined. Pour into muffin trays.

  3. Bake for 30 minutes or until cooked through.

  4. Store in the fridge for up to a week. Can be frozen too.

  5. Can use fresh herbs instead if you have them.
