Tasty Veggie Burger with Lentils
Ingredients
- 1 cup green or brown lentils
- 2-3 cups water
- 1/2 cup chopped walnuts
- 1 cup whole-wheat panko bread crumbs
- 1 medium onion
- 3-4 garlic cloves
- 1 teaspoon onion powder
- 1 teaspoon sweet paprika
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 tablespoon tamari or soy sauce or coconut aminos
- Salt and pepper to taste
Optional
- 1-2 tablespoons BBQ sauce
- Avocado oil
Preparation
Cook the lentils in water until tender. Drain if necessary.
Chop the onion and garlic.
In a food processor, combine the cooked lentils, chopped walnuts, bread crumbs, chopped onion, garlic, onion powder, sweet paprika, smoked paprika, cumin, tamari, salt, pepper, and optional BBQ sauce. Pulse until well mixed.
Form the mixture into 4 patties.
Heat avocado oil in a pan and fry the patties until golden brown on both sides, or bake in the oven at 375°F for 20-25 minutes.
