Vegan Caramel Energy Balls

Ingredients

  • 2 cups brown dates, soaked in warm water for 30 minutes
  • 1/2 cup rolled oats
  • 1/3 cup buckwheat groats
  • 1 heaped tbsp Peanut butter
  • 1 tbsp vanilla vegan protein powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • Cacao powder and sugar for rolling

Preparation

  1. Place all of the ingredients except the cacao powder and sugar in a high-speed blender.

  2. Blend until smooth.

  3. Scoop out the mixture and roll into balls.

  4. Roll the balls in cacao powder and coconut sugar.
