Vegan Halloween
Ingredients
- 1 1/4 cups all purpose flour or a flour blend of your choice
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup coconut milk
- 1/2 cup water
- 1 cup date sugar
- 1/3 cup coconut oil
- 1 teaspoon pure vanilla extract
- For the FROSTING
- 1 teaspoon vanilla extract
- A few dark chocolate chips
- Coconut whipped cream (adjust amount to your needs as topping for the cupcakes) either buy already ready to use whipped cream for your grocery store or you can Google some easy recipes on how to make your own
Preparation
Preheat oven to 180 C° degrees
Line cupcake pans with paper cupcake liners
Put together the flour, cocoa powder, baking powder, baking soda, and salt
Set aside
In large mixing bowl, stir together coconut milk, water until slightly curdled
Add sugar, oil, and vanilla extract
Slowly whisk in flour mixture
Mix for 1 minute, until combined
Pour batter into prepared cupcake pan
Bake for 16-18 minutes, or until toothpick inserted in center of cupcake comes out clean
Place cupcakes on cooling rack and cool completely
For frosting beat the coconut whipped cream along with the vanilla extract for 1 minute until fluffy or just pure the whipped cream on top of the cupcake if it already has the desired consistency
Add the chocolate chips as the eyes of yours
