Spicy Minestrone Soup

Ingredients

  • 2 tbs of olive oil
  • 3 cloves of minced garlic
  • 1 tbs of minced shallot
  • 3/4 cup of chopped yellow onion
  • 3/4 cup of sliced celery
  • 3/4 cup of half mooned carrots
  • 8 cups of filtered water
  • 1/4 cup of chopped curly parsley
  • 2 sprigs of thyme
  • 2 tsps of apple cider vinegar
  • 1/3 cup of lentils
  • 2 cups of pasta (we used shell)
  • dash of red pepper flakes
  • 1 1/2 tsp of pink himalayan salt
  • 1/2 tsp of black pepper
  • 1/2 tsp of dried oregano
  • 1/2 tsp of garlic powder
  • 1/8 tsp of cayenne pepper
  • 1/4 tsp of paprika
  • 1/4 tsp of cumin
  • 3/4 cup of chopped vine ripe tomatoes
  • 2 cups of chopped kale

Preparation

  1. In a large pot on medium heat add olive oil, garlic, shallot, and onion, stir for 5 minutes

  2. Next add celery and carrots and stir for another 5 minutes

  3. Pour in filtered water, along with parsley, thyme, and apple cider vinegar, cover with lid and simmer for 20 minutes

  4. Remove lid from pot add lentils, pasta, seasonings, and tomatoes, simmer for another 20 minutes covered or until lentils and pasta is tender

  5. Remove lid and add kale to soup turn heat off and serve immediately, garnish with cayenne pepper and nutritional yeast flakes and enjoy ???? #threebunnies
