15-Minute Vegan Kidney Bean Burgers

Ingredients

  • 1 tin organic kidney beans (400g)
  • 70g chestnut mushrooms (roughly 8 mushrooms)
  • 50g baby spinach leaves
  • 70g red onion (roughly 1 small onion)
  • 1 cup organic rolled oats
  • 1/2 tsp salt (to taste)
  • 1 tsp smoked paprika

Preparation

  1. Place everything in a food processor except oats.

  2. Add oats and roll into patties.

  3. Cook in a pan with a dash of olive oil or bake in the oven; baking takes longer.

  4. Serve with red cabbage slaw, sriracha sauce, and home-baked vegan bagels.
