15-Minute Vegan Kidney Bean Burgers
Ingredients
- 1 tin organic kidney beans (400g)
- 70g chestnut mushrooms (roughly 8 mushrooms)
- 50g baby spinach leaves
- 70g red onion (roughly 1 small onion)
- 1 cup organic rolled oats
- 1/2 tsp salt (to taste)
- 1 tsp smoked paprika
Preparation
Place everything in a food processor except oats.
Add oats and roll into patties.
Cook in a pan with a dash of olive oil or bake in the oven; baking takes longer.
Serve with red cabbage slaw, sriracha sauce, and home-baked vegan bagels.
