Apple Power Cake

Ingredients

  • 160g oats
  • 285g wholemeal self-raising flour
  • 170g sugar
  • 30g ground flax seed @linwoodshealthfoods
  • 2 tbsp chia seeds
  • 50g sunflower seeds
  • 80g sultanas
  • 250g apple sauce
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 275ml almond milk
  • 1-2 apples for the top

Preparation

  1. Mix the dry ingredients together in a large bowl

  2. Add the apple sauce and almond milk and mix well

  3. Pour into a lined cake tin

  4. Core and slice the apples and arrange on top

  5. If you prefer you can just chop and add to the cake mix

  6. Bake at 180°C for about 30-40 mins or until a skewer inserted in the middle comes out clean

  7. Cool on a wire rack
