Arugula Salad with Feta

Ingredients

Salad

  • 100 g arugula
  • 250 g cherry tomatoes
  • 150 g feta

Dressing

  • 2 teaspoons mustard
  • 3 teaspoons honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons white wine vinegar
  • 6 tablespoons olive oil

Preparation

  1. Wash the arugula and dry it in a salad spinner or with a kitchen towel. Wash the cherry tomatoes and halve them. Place them in a large bowl.

  2. For the dressing, thoroughly mix mustard, honey, salt, pepper, and vinegar. Then add the olive oil and stir vigorously until a creamy vinaigrette forms.

  3. Crumble the feta over the salad with your hands. Pour the dressing over it and mix everything together. Divide onto plates and enjoy!

Tips

  1. Simply roast 1-2 tablespoons of your favorite seeds or nuts and add them to the salad!
