Arugula Salad with Feta
Ingredients
Salad
- 100 g arugula
- 250 g cherry tomatoes
- 150 g feta
Dressing
- 2 teaspoons mustard
- 3 teaspoons honey
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 tablespoons white wine vinegar
- 6 tablespoons olive oil
Preparation
Wash the arugula and dry it in a salad spinner or with a kitchen towel. Wash the cherry tomatoes and halve them. Place them in a large bowl.
For the dressing, thoroughly mix mustard, honey, salt, pepper, and vinegar. Then add the olive oil and stir vigorously until a creamy vinaigrette forms.
Crumble the feta over the salad with your hands. Pour the dressing over it and mix everything together. Divide onto plates and enjoy!
Tips
Simply roast 1-2 tablespoons of your favorite seeds or nuts and add them to the salad!
